RECIPES FOR HEALTHY LIVING

CREAMY CARROT SOUP
1 small onion
2 medium carrots
1 teaspoon Celtic Sea Salt
1 cup oatmeal
3 tablespoons miso
1-quart water
1 scallion for garnish
In a hot soup pot splash in sesame oil and chopped onion, and a pinch of Celtic Sea Salt, then stir until onions are translucent. Immediately add 1 cup of chopped carrots and a 1 cup of oatmeal. Stir a moment. Add 4 cups of water and cook until carrots are soft. Blend and return to soup pot.
Add 3 tablespoons of your favorite miso and simmer.
Add chopped scallions for a garnish.
ROASTED ORGANIC BROWN RICE SALAD
2 cups organic brown rice
1 quart filtered water
Various vegetables cut up small, for example:
1 clove garlic
1 small carrot
In a frying pan roast the 2 cups of organic brown rice until golden brown. Add to large pot and add 1 quart of water. Bring to boil and simmer for 25 minutes. While rice is cooking, cut up vegetables small and cook them in this manner: In the hot frying pan add a bit of olive oil, cook garlic for a minute and then add tofu, allow to brown a bit, followed by the remaining vegetables. Cook until carrots are al dente. Set aside.
After rice is cooked, (it will be fluffy and chewy) add the vegetables and then a dressing of oil and vinegar or Vegenaise.
